The Bday Weekend...


Well, I came home Friday night to a surprise party! J planned a whole party and surprised me with my Mom, Dad, Sister, Brother, Sister in law, and Nikki (My bday twin). He had help planning the party with Faith from what I hear. Thanks Faith!! I had a great time hanging out with everyone. The boys don't like to get their pictures taken I guess, because they are scarce...but us women, well, that's another story!




As most of you know, I cannot keep my eyes open in a picture to save my life. So, when my sister took my picture all night and my eyes were open in every shot (The picture above was my camera...eyes closed), well, I had to go out and buy the same camera. So, not only did I get a surprise party, a Cuisinart (I've wanted for a long time now), and a gorgeous diamond and ruby ring, I also bought myself a nice camera! haha, I'm spoiled, what can I say. I figure the money is worth it to be able to look back at pictures of myself and actually like them because my eyes are open.


As you can see, Rossi wasn't as impressed with all of the excitement.

Friday was the party, Saturday we went down to Old Sac. Paula cooked a wonderful dinner as usual and we went to Best Buy to get the camera and hung out all night. Sunday (my actual bday) we went to Amador County for some wine tasting. I love doing this mind you...it's my most favorite hobby of all time I think!! haha. I now own more bottles of wine than I have spaces to put them. And I'm sooo happy about that! :P

I took the day off work on Monday so I could spend the morning with my family, and then I had to decompress the rest of the day. I had a blast this weekend with my family that I never see, but I was and am still tired! I'm old now remember!!

I would like to thank my awesome hubby J, for planning this weekend for me and making it very special. I truly have the best husband ever. I couldn't ask for anyone better. Thank you babe, I love you!!

What's for Dessert Wednesday....


J and I are eating much better lately and have both lost a lot of weight. So we try to tailor our menu to help achieve this goal. So, we had low fat BLT's for dinner. Fake bacon (since I don't eat meat) and instead of mayo, you use avocado mashed up with salt, lemon juice, and cayenne pepper. It was really good. But what I was most excited about was this dessert! I subscribe to Self magazine, and they have a special out right now called Self Dishes. I saw this healthy low fat cobbler in there and I had to try it! It is a blackberry peach cobbler. Yum!! The picture doesn't look all that appetizing, but it was really good!! You mix the berries, peaches, orange juice and vanilla extract in a bowl. In another bowl you combine whole wheat flower, rolled oats, brown sugar, cinnamon, nutmeg, honey, and canola oil. Put the fruit mixture in a ramekin, then top with the crumble topping. Bake at 375 for 20 minutes.

One thing I would do differently...I placed the 4 ramekins on a stone cookie sheet because my ramekins are small. It didnt cook as well as it would have had I just put them on the rack...still trying to figure out how to do that.
